An introduction of our new head chef, Hiroshi Higa, and a personal word of greeting

Career experience
After working as a sous chef at famous restaurants both outside the prefecture and resort hotels and within the prefecture, he became the head chef of a local hotel in 2015. In 2017, he was promoted to executive chef and has been dedicated to the development of Okinawa's food culture for many years. He is a certified culinary technician and has also been active as a "Ryukyu traditional cuisine specialist," certified as such by the Okinawa Prefectural Governor. In 2023 he received an "Outstanding Achievement Merit Award" for his outstanding culinary skills and level of excellence. His skills and achievements are highly praised. We expect you will quickly agree as you enjoy this dining experience for yourself.
A warm greeting and welcome from the head chef
I am excited about this new opportunity at the Rizzan Resort hotel. My goal is to incorporate the experience and knowledge I have learned to this point to offer dishes using Okinawan ingredients that highlight seasonal flavors to make your family experience special. I feel this is a great way to connect with both our guests and the local community.
Our Goal: Bringing Cultures Together in Harmony
"Ryukyu Chinese" is a fusion of traditional Chinese cooking techniques and "Ryukyu Cuisine," a unique food culture fostered by the Okinawan climate. We work with local Okinawan farmers to use carefully selected ingredients from the prefecture. Seafood and island vegetables are prepared with Chinese techniques to bring out the best flavors the ingredients have to offer. This integration of both Chinese and Ryukyu cuisines is unique way to highlight the harmony of differing cultures, bringing out the best of both.
